holiday brekkie

I woke up this morning at a lovely late hour in the mood for a good breakfast. Then I realised it's Christmas Eve, and I especially wanted something nice. Lucky for me, I had on hand half a loaf of thick-sliced honey wheat bread and just enough bacon to feed my brother and me. French toast and bacon it was!

French toast is one of those things I always just throw together... but a rough recipe is 1 egg, 1/4 C milk and a generous splash of vanilla per two slices of bread. Whisk the egg mixture with a fork, dredge the bread in the mixture on each side, and fry in a griddle with a little bacon grease (or butter, I suppose). I always keep the finished french toast on a plate in a 200 degree oven to keep it warm until we're ready to eat.

I resurrected the hot tub of bacon and served everything on my Smithsonian china, with Community coffee and egg nog to drink and some Christmas music playing in the background (of course). Not a bad way to kick off the Christmas festivities. It's only going to get better, with Christmas dinner tonight, some holiday baking tomorrow, and the extended family get-together over smoked brisket on Monday.
